Nduja is the most famous Calabrian cured meats in the world. It is a sausage with a spicy flavour and a strong aroma. It has a creamy and spreadable consistency, used a lot in cooking, in first courses as in appetizers and on croutons.
Gluten-free and without milk derivatives, Nduja is obtained from the careful selection of fatty parts of the pig, such as pancetta and guanciale, and flavoured with Calabrian hot pepper. It is stuffed into natural casings, pierced and then tied by hand with natural twine, subjecting it to slow maturation.
